Ingredients
- 1 lb fresh green beans, tops removed but tails left on
- 5 large garlic cloves, very thinly sliced
- 4 tablespoons olive oil
- 1 sprig fresh rosemary
- 1 teaspoon sea salt
- 2 tablespoons red wine vinegar
Method
- Drop the beans into a pot of boiling water and cook for 6 minutes.
- Plunge the cooked beans into a bowl of cold water with a few ice cubes added.
- Drain them thoroughly and dry off with a paper towel.
- Place in a serving bowl.
- Heat the olive oil over low heat in a small saucepan.
- Strip the rosemary from its stalk and chop very finely.
- Add the garlic and rosemary to the olive oil and let cook until creamy in colour, then take the pan off the heat.
- Pour the oil/garlic/rosemary mixture over the beans and add the salt.
- Drizzle the vinegar over the beans and mix thoroughly.
- Serve immediately.
