Ingredients

  • 1 lb fresh green beans, tops removed but tails left on
  • 5 large garlic cloves, very thinly sliced
  • 4 tablespoons olive oil
  • 1 sprig fresh rosemary
  • 1 teaspoon sea salt
  • 2 tablespoons red wine vinegar

Method

  • Drop the beans into a pot of boiling water and cook for 6 minutes.
  • Plunge the cooked beans into a bowl of cold water with a few ice cubes added.
  • Drain them thoroughly and dry off with a paper towel.
  • Place in a serving bowl.
  • Heat the olive oil over low heat in a small saucepan.
  • Strip the rosemary from its stalk and chop very finely.
  • Add the garlic and rosemary to the olive oil and let cook until creamy in colour, then take the pan off the heat.
  • Pour the oil/garlic/rosemary mixture over the beans and add the salt.
  • Drizzle the vinegar over the beans and mix thoroughly.
  • Serve immediately.
