Ingredients

  • 1/4 cup vegetable oil , divided
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 (6-ounce) can tomato paste
  • 3/4 cup water
  • 1/2 cup vinegar
  • 2 tablespoons sugar
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 teaspoons salt
  • 1 teaspoon dry mustard
  • 1/8 teaspoon pepper
  • 1/8 teaspoon chili powder
  • 4 whole cloves
  • 1 bay leaf
  • 3 drops hot sauce
  • 5 pounds country-style pork ribs, cut into 6 serving-size pieces
  • 1 tablespoon salt

Method

  • Heat 1 tablespoon oil in a medium saucepan; add onion and garlic. Cook over low heat until onion is tender.
  • Add next 12 ingredients, stirring well. Bring mixture to a boil. Reduce heat; cover and simmer 1 hour. Remove whole cloves and bay leaf; discard. Set sauce aside.
  • Place ribs, 1 tablespoon salt, and water to cover in a large Dutch oven. Bring to a boil. Reduce heat; cover and simmer 30 minutes or until ribs are tender. Drain.
  • Place ribs on grill over slow coals. Grill 5 minutes on each side. Brush both sides of meat liberally with sauce; grill an additional 5 minutes on each side. Serve remaining sauce with ribs.
