Ingredients
- 3 eggs
- 3/4 c. milk
- 2 c. Stove Top chicken or cornbread stuffing mix
- 1 1/2 c. cubed cooked chicken
- 1 large tomato, chopped
- 3 Tbsp. chopped green onion
- 3 Tbsp. chopped green chiles
- salsa and sour cream
Method
- Beat eggs in a large bowl, stir in milk.
- Add remaining ingredients, except salsa and sour cream; mix well.
- Pour mixture into greased 9-inch microwavable pie plate.
- Cover loosely with wax paper.
- Microwave on High for 5 minutes.
- Stir edges of mixture into center and from center to outside edges, smoothing out surface.
- Cover.
- Microwave 4 minutes or until center is no longer wet.
- Remove from microwave and let stand 5 minutes.
- Serve immediately with salsa and sour cream.
