Ingredients

  • 3 eggs
  • 3/4 c. milk
  • 2 c. Stove Top chicken or cornbread stuffing mix
  • 1 1/2 c. cubed cooked chicken
  • 1 large tomato, chopped
  • 3 Tbsp. chopped green onion
  • 3 Tbsp. chopped green chiles
  • salsa and sour cream

Method

  • Beat eggs in a large bowl, stir in milk.
  • Add remaining ingredients, except salsa and sour cream; mix well.
  • Pour mixture into greased 9-inch microwavable pie plate.
  • Cover loosely with wax paper.
  • Microwave on High for 5 minutes.
  • Stir edges of mixture into center and from center to outside edges, smoothing out surface.
  • Cover.
  • Microwave 4 minutes or until center is no longer wet.
  • Remove from microwave and let stand 5 minutes.
  • Serve immediately with salsa and sour cream.
