Ingredients

  • 1 1/4 oz. olive oil
  • 2 1/2 oz. finely diced onion
  • 8 cloves minced garlic
  • 8 oz. white wine
  • 4 oz. clam juice
  • 2 c. cream
  • 8 oz. chopped clams
  • 1/2 c. chopped fresh basil
  • salt and pepper to taste
  • fettucini
  • basil
  • Parmesan cheese

Method

  • Saute onion and garlic in olive oil for a couple of minutes on low heat.
  • Add wine and clam juice.
  • Reduce by 1/4.
  • Add cream and simmer until reduced by one-half its volume.
  • Add clams, salt and pepper.
  • Combine with fettucini.
  • Garnish with basil and Parmesan cheese.
  • Makes 8 servings.
