- 1 1/4 oz. olive oil
- 2 1/2 oz. finely diced onion
- 8 cloves minced garlic
- 8 oz. white wine
- 4 oz. clam juice
- 2 c. cream
- 8 oz. chopped clams
- 1/2 c. chopped fresh basil
- salt and pepper to taste
- fettucini
- basil
- Parmesan cheese
Method
- Saute onion and garlic in olive oil for a couple of minutes on low heat.
- Add wine and clam juice.
- Reduce by 1/4.
- Add cream and simmer until reduced by one-half its volume.
- Add clams, salt and pepper.
- Combine with fettucini.
- Garnish with basil and Parmesan cheese.
- Makes 8 servings.
