Ingredients
- 1/2 c. flour
- 1/2 tsp. salt
- 3/4 c. small curd cottage cheese
- 3 eggs, separated
Method
- Mix flour, salt and cheese together.
- Beat egg yolks until lemon colored.
- Add to flour mixture.
- Beat egg whites stiff, but not dry.
- Fold in egg whites.
- Drop in small spoonfuls on a griddle and brown on both sides.
- A lid helps cook these through. Yield: 12 (3-inch) pancakes.
