Ingredients

  • 1/2 cup good olive oil
  • 4 cloves garlic, minced
  • 100g parmesan cheese, to serve (parmesan is best, but desperate times can call for any available cheese)
  • red chilli, deseeded finely chopped
  • tin of tuna in oil
  • fresh tomato, chopped
  • green olives, chopped
  • 1 red onion, finely chopped
  • parsley, chopped, or arugula is a nice alternative

Method

  • Cook pasta until al dente, drain.
  • While pasta is cooking, heat oil in a heavy pan.
  • Add whatever youre using out of garlic, chilli, tuna, tomatoes, and olives to the hot oil, then add hot pasta and stir well.
  • You want everything to be fresh, so just fry it enough to heat it before adding the pasta, not to actually cook it.
  • The same goes with the garlicyou want it nice and bitey, so fry it for just 30 seconds or so, otherwise it will get sweet and mellowgood for some things, but not for this.
  • Season well to taste.
  • Stir through the arugula/parsley and serve with parmesan and lemon juice squeezed on top.
