Ingredients
- 2 tomatoes
- 2 eggs
- Optional:
- a few strips of fresh basil
- a few chunks of cheese
- crusty bread on the side
- salt and pepper to taste
Method
- 1. Preheat the oven to 400 degrees.
- 2. Hollow out the tomatoes, saving or discarding the inside.
- 3. Crack an egg into each hollowed tomato shell.
- 4. Cook for 15-25 minutes in a baking dish or ramekin. Test doneness with a fork several times while cooking to make sure the whites have set but the egg yolk is still runny. Oven temperatures vary so watching this carefully is important. A few minutes before ready top each with cheese if you are using some.
