Ingredients

  • 2 tomatoes
  • 2 eggs
  • Optional:
  • a few strips of fresh basil
  • a few chunks of cheese
  • crusty bread on the side
  • salt and pepper to taste

Method

  • 1. Preheat the oven to 400 degrees.
  • 2. Hollow out the tomatoes, saving or discarding the inside.
  • 3. Crack an egg into each hollowed tomato shell.
  • 4. Cook for 15-25 minutes in a baking dish or ramekin. Test doneness with a fork several times while cooking to make sure the whites have set but the egg yolk is still runny. Oven temperatures vary so watching this carefully is important. A few minutes before ready top each with cheese if you are using some.
