Ingredients

  • 5 large granny smith apples, Cored, peeled, sliced 1/2 inch pieces
  • 6 tablespoons butter
  • 12 cup almonds, slivered
  • 12 cup dark brown sugar
  • 34 cup golden raisin
  • 3 tablespoons dark rum or 3 tablespoons golden rum
  • 1 sheet frozen puff pastry, defrosted
  • sugar
  • whipped cream, sweetened with
  • 1 dash rum

Method

  • preheat oven to 400F In a pan, melt butter.
  • Add almonds and sugar.
  • Meanwhile, place raisins and rum in a separate bowl and microwave on high for one minute to soften the raisins.
  • Add to pan and toss in apples to coat.
  • Cover and cook for three minutes.
  • Transfer ingredients to Corningware Simply Lite bakeware and place puff pastry loosely over the apples.
  • Slash in three places to vent and sprinkle with a little sugar.
  • Serve while still warm and garnish with a dollop of whipped cream.
