Ingredients
- 4 medium tomatoes diced
- 1 medium red onion finely chopped
- 1 tablespoon cilantro freshly chopped
- 1 each lemon juice, freshly squeezed
- 1 tablespoon olive oil, extra-virgin
- 1 x salt to taste
- 1 x black pepper freshly ground to taste, optional
Method
- Combine tomato, red onion and cilantro leaves in a medium bowl.
- Stir in lemon juice, olive oil and cilantro leaves.
- Season with salt and pepper if desired.
