Ingredients
- 2 eggs
- 1 splash of milk
- 1 salsa
- 1 bag low fat mexican style shredded cheese
Method
- spray a small non stick frying pan with cooking spray and place on stove top on medium low
- mix eggs milk and 2 tablespoons of salsa.
- beat together until mixed well.
- add mixture to frying pan.
- cook on medium low until you can lift up the sides with your spatula without breaking the omelette
- flip omelette over and add desired amount of cheese.
- after about 2 minutes fold omelette in half using the spatula.
- add a tablespoon or two of salsa to the top and sprinkle with cheese.
- normally id top it with a some chives but i didnt have any this time
