Ingredients

  • 2 eggs
  • 1 splash of milk
  • 1 salsa
  • 1 bag low fat mexican style shredded cheese

Method

  • spray a small non stick frying pan with cooking spray and place on stove top on medium low
  • mix eggs milk and 2 tablespoons of salsa.
  • beat together until mixed well.
  • add mixture to frying pan.
  • cook on medium low until you can lift up the sides with your spatula without breaking the omelette
  • flip omelette over and add desired amount of cheese.
  • after about 2 minutes fold omelette in half using the spatula.
  • add a tablespoon or two of salsa to the top and sprinkle with cheese.
  • normally id top it with a some chives but i didnt have any this time
  • enjoy!
