Ingredients
- 2 pounds Fingerling Potatoes
- 1/4 cups Extra Virgin Olive Oil (more Or Less As Needed)
- 3 Tablespoons Seasoned Salt (more Or Less As Needed)
- 1 Tablespoon Salt
- 1 Tablespoon Pepper
Method
- 1. Pre-heat oven to 400.
- 2. Scrub the potatoes clean.
- 3. Place potatoes on a baking sheet. (I line mine with parchment paper for easy clean up - I am lazy like that!)
- 4. Drizzle olive oil over potatoes. Try to cover them as much as possible - but you don't want to have them sitting in big puddles of oil either.
- 5. Sprinkle seasoned salt all over the potatoes.
- 6. Finish with a little salt and pepper.
- 7. Place in oven for 20 - 30 minutes. You are looking for the largest of the potatoes to be fork tender.
- 8. Remove from oven and serve next to your favorite meat dish.
- They look very elegant on your plate but also are kid friendly. (My crew loves to dip them in sour cream - nothing can be for the worse with sour cream on it!)
