Ingredients

  • 1/2 cup butter, softened
  • 1/3 cup granulated sugar
  • pinch None salt
  • 1 tsp vanilla extract
  • 3 None eggs
  • 3 1/2 oz dark chocolate, chopped
  • 1 3/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 7 oz marzipan
  • 1/3 cup powdered sugar, plus extra for dusting
  • 1 tube black decorating icing
  • None None sugar flowers, to decorate
  • a few drops green food coloring

Method

  • Preheat the oven to 325°F. Line an 8 cup muffin pan with paper liners. Cream the butter, sugar, salt and vanilla extract with an electric hand mixer. Add the eggs, beating well between each addition. Stir in the chocolate. Fold in the flour and baking powder. Divide the cake batter evenly and bake for 20-25 mins. Remove and cool on a wire rack.
  • Meanwhile, knead together the marzipan and powdered sugar. Use 3/4 of the marzipan to make 8 bunny rabbit shapes. Reserve the remaining 1/4 marzipan. Use the black decorating icing to pipe details onto the bunnies. Decorate with the sugar flower decorations.
  • To finish, dust the cupcakes with the powdered sugar. Knead the green coloring through the remaining marzipan then press through a garlic press onto the cupcakes to create "grass". Place a bunny on top of each cupcake.
