Ingredients
- 1 1/4 c. flour
- 3/4 c. yellow cornmeal
- 1 Tbsp. baking powder
- 1 Tbsp. sugar
- 1 tsp. salt
- 2 eggs, slightly beaten
- 1 c. milk
- 1/4 c. melted butter
- 1 c. whole kernel corn, well drained
- 1 Tbsp. minced green onion
Method
- Mix all together until lumps are out.
- Spoon into large greased muffin cups.
- Bake at 400° for 20 to 25 minutes.
- Each muffin is 146 calories, 4 gm. protein and 6 gm. fat.
- Makes 1 dozen.
