Ingredients

  • 1 c. chopped pecans
  • 1 1/3 c. flour
  • 1/2 c. solid pack dark brown sugar
  • 2 tsp. baking powder
  • 1/2 tsp. grated orange rind
  • pinch of powdered ginger
  • pinch of powdered cinnamon
  • 1/2 c. milk
  • 2 beaten eggs
  • 1/4 c. melted butter (unsalted)
  • few grains salt

Method

  • Combine the first 7 ingredients together well.
  • Mix together the milk, eggs, butter and salt, then add dry ingredients, stirring just enough to mix evenly.
  • Have muffin tins buttered and floured and fill each cup half full.
  • Bake at 350° for 25 minutes; check during baking.
