Ingredients

  • large chicken
  • 4 Tbsp. flour
  • 2 c. chopped okra
  • 1 large onion
  • 1 green bell pepper
  • 4 cloves garlic
  • 2 Tbsp. chopped green onion
  • 1 tsp. Worcestershire sauce
  • salt
  • pepper
  • 3 qt. water

Method

  • Smother okra in small amount of oil; set aside.
  • Make roux by mixing flour and oil together and browning slowly.
  • Add okra; add all other ingredients. Cook until chicken is tender (about 1 hour). Remove chicken.
  • Debone and replace chicken into gumbo.
  • Season to taste.
