- large chicken
- 4 Tbsp. flour
- 2 c. chopped okra
- 1 large onion
- 1 green bell pepper
- 4 cloves garlic
- 2 Tbsp. chopped green onion
- 1 tsp. Worcestershire sauce
- salt
- pepper
- 3 qt. water
Method
- Smother okra in small amount of oil; set aside.
- Make roux by mixing flour and oil together and browning slowly.
- Add okra; add all other ingredients. Cook until chicken is tender (about 1 hour). Remove chicken.
- Debone and replace chicken into gumbo.
- Season to taste.
