Ingredients

  • 4 chicken breasts
  • 1 box Rice-A-Roni (chicken flavor)
  • 3 green onions, chopped
  • 3/4 green pepper, chopped
  • 1 can drained and chopped artichoke hearts
  • 1/2 c. mayonnaise to taste
  • 1/4 to 1/2 tsp. curry powder to taste
  • salt and pepper to taste

Method

  • Cook chicken and cut up in bite size pieces.
  • Make Rice-A-Roni according to package directions and cool.
  • Combine chicken, rice, onions, pepper, artichoke hearts, mayonnaise, curry powder, salt and pepper.
  • Mix well; put in pan and refrigerate overnight to blend flavors and enhance taste.
  • Cut in squares and serve on lettuce leaves.
