Ingredients

  • 1/2 c. honey
  • 1/2 c. Dijon mustard
  • 1 tbsp. lemon juice
  • 1 tbsp. curry pwdr
  • 2 tbsp. soy sauce
  • 1/4 c. butter
  • Chicken, cut up to serve 5
  • Coconut; optional
  • Raisins; optional
  • Chutney; optional
  • Peanuts; optional

Method

  • Put chicken in flat baking dish, skin side down.
  • Heat and mix other ingredients in saucepan.
  • Cover; let stand all day or possibly overnight.
  • Turn chicken, cover with foil; bake 1 hour at 350 degrees.
  • Remove foil and bake 15 min longer.
  • Baste once or possibly twice.
  • Serve with warm rice.
  • Serve with coconut, raisins, peanuts, or possibly chutney as condiments.
