- 15/16 cup wild rice
- 1 5/8 cups water
- 1 chicken bouillon cube
- 1 tablespoon curry powder
- 1 tablespoon vegetable oil
- 1 green bell pepper
- 2 skinless chicken breasts
- 2 1/16 cups mushrooms
- salt
- ground black pepper
Method
- Cook the wild rice in the water with the bouillon cube and curry powder for about 30 minutes. Drain any excess water and set aside.
- Add a tablespoon of oil and saute the bell pepper on medium heat for 3 minutes
- Add the diced chicken, fillets.
- Add the mushrooms and season with salt and black pepper.
- Add the rice and cook for a few minutes. Serve with a spicy sauce.
