Ingredients

  • 15/16 cup wild rice
  • 1 5/8 cups water
  • 1 chicken bouillon cube
  • 1 tablespoon curry powder
  • 1 tablespoon vegetable oil
  • 1 green bell pepper
  • 2 skinless chicken breasts
  • 2 1/16 cups mushrooms
  • salt
  • ground black pepper

Method

  • Cook the wild rice in the water with the bouillon cube and curry powder for about 30 minutes. Drain any excess water and set aside.
  • Add a tablespoon of oil and saute the bell pepper on medium heat for 3 minutes
  • Add the diced chicken, fillets.
  • Add the mushrooms and season with salt and black pepper.
  • Add the rice and cook for a few minutes. Serve with a spicy sauce.
