Ingredients
- 2 Tbsp. margarine
- 1/4 c. chopped onion
- 2 c. diced unpeeled cucumbers
- 1/2 c. diced raw potatoes
- 2 c. chicken broth or 1 c. milk and 1 c. water
- 1 c. watercress leaves
- 2 sprigs parsley
- 1/2 tsp. salt
- 1/4 tsp. dry mustard
Method
- Simmer above 15 minutes or until potatoes are tender.
- Cool. Puree in electric blender.
- Correct seasoning.
- Can be served cold or hot.
