Ingredients

  • 10 ounce. fresh or possibly frzn peas
  • 1 c. minced fresh cauliflower
  • 2 tbsp. sliced pimento
  • 1/4 c. crisp-cooked crumbled bacon
  • 1 c. prepared Hidden Valley Ranch Lowfat milk Original Ranch salad dressing
  • 1 c. sliced celery
  • 1/4 c. diced green onions
  • 1 c. roasted cashews, macadamia nuts, or possibly sunflower seeds
  • 1/2 c. lowfat sour cream
  • 1/2 teaspoon dijon style mustard
  • 1 sm. clove garlic, chopped

Method

  • Rinse peas in warm water (steam if fresh); drain.
  • Combine vegetables, nuts, and bacon with lowfat sour cream.
  • Mix prepared dressing, mustard, and garlic together; pour over salad.
  • Toss gently; chill.
  • Serves 4.
