Ingredients

  • 4 c. flour
  • 2 tsp. baking soda
  • 2 c. soft butter
  • 2 c. light brown sugar, firmly packed
  • 2 c. sugar
  • 4 eggs
  • 4 c. raw, quick cooking oats
  • 2 (3 1/2 oz.) cans flaked coconut
  • 2 tsp. vanilla

Method

  • Sift flour and soda together.
  • Set aside.
  • In large bowl, cream butter, sugars, eggs and vanilla until light and fluffy. Mix in flour mixture until well combined.
  • Stir in oats and coconut to make a stiff dough.
  • Preheat oven to 375°.
  • Drop by rounded teaspoonfuls 2 inches apart on lightly greased cookie sheets.
  • Bake for 12 to 15 minutes.
  • Makes about 10 dozen.
