Ingredients
- 4 c. flour
- 2 tsp. baking soda
- 2 c. soft butter
- 2 c. light brown sugar, firmly packed
- 2 c. sugar
- 4 eggs
- 4 c. raw, quick cooking oats
- 2 (3 1/2 oz.) cans flaked coconut
- 2 tsp. vanilla
Method
- Sift flour and soda together.
- Set aside.
- In large bowl, cream butter, sugars, eggs and vanilla until light and fluffy. Mix in flour mixture until well combined.
- Stir in oats and coconut to make a stiff dough.
- Preheat oven to 375°.
- Drop by rounded teaspoonfuls 2 inches apart on lightly greased cookie sheets.
- Bake for 12 to 15 minutes.
- Makes about 10 dozen.
