Ingredients

  • 1 loaf French bread
  • 12 cup olive oil
  • 3 -4 sprigs rosemary
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 cup grated parmesan cheese or 1 cup romano cheese
  • 13 cup fresh basil, coarsely chopped
  • 1 small lemon, zested and juiced
  • 12 teaspoon salt
  • 12 teaspoon pepper
  • 1 teaspoon paprika
  • chopped bacon

Method

  • Cut bread into 1/2 inch thick slices and brush one side with olive oil.
  • Bake at 400 for 10-12 minutes or until toasted.
  • Meanwhile, in a food processor, combine beans, cheese, basil, lemon zest and juice, salt and pepper.
  • Mix until chunky, then add olive oil in a steady stream until mixture becomes smooth.
  • Spread mixture onto toasted bread and top with bacon.
  • Sprinkle with paprika and serve warm.
  • Garnish with basil if desired.
