Ingredients

  • 6 whole Potatoes
  • 1 cup Milk
  • 1 cup Wheat Flour
  • 1 teaspoon Cayenne Pepper (adjust To Your Taste)
  • 1 teaspoon Salt (more Or Less)
  • Maple Mustard Sauce (see Recipe Below)
  • 1 cup Oil (I Use Canola)
  • _____
  • FOR THE MAPLE MUSTARD SAUCE:
  • 1/8 cups Yellow Mustard
  • 1/8 cups Whole Grain Mustard
  • 1/8 cups Plain Yogurt Or Mayonnaise, To Add Creaminess
  • 1 teaspoon Maple Syrup, Or More To Taste

Method

  • 1. Heat oil to 375 degrees in a deep fryer or in a skillet over medium-high heat. (If the fries are not super crisp, turn the heat up just a little.)
  • 2. Slice washed and unpeeled potatoes into strips.
  • 3. Coat potatoes with milk.
  • 4. Add cayenne to the flour and then drop your potatoes into the cayenne-seasoned flour.
  • 5. Drop battered potatoes in oil and cook until light brown on both sides.
  • 6. Sprinkle with salt or more cayenne (if you're brave enough).
  • FYI: You can use any flour, but the wheat flour truly does nothing different for the taste or texture, so don't be afraid to use it. Plus, it adds a nice golden color.
  • MAPLE MUSTARD SAUCE:
  • The basic mustard sauce recipe is 2 parts of yellow and whole grain mustard (1 part each), 1 part plain yogurt or mayonnaise, and maple syrup to taste. Simply mix ingredients together until smooth. Adjust the amounts to your liking.
