Ingredients

  • 1 Tablespoon Olive Oil
  • 1 pound Sausage, Sliced 1/2 Inch Thick (Turkey Or Your Favorite)
  • 1- 1/2 cup Onion, Diced
  • 2 cloves Garlic, Minced
  • 2 cups Low Sodium Chicken Broth
  • 1 can (14 1/2 Oz. Size) Diced Tomatoes
  • 1/2 cups Milk Or Heavy Cream
  • 8 ounces, weight Egg Noodles
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Pepper
  • 1- 1/2 cup Shredded Monterey Jack Cheese

Method

  • Heat olive oil in a saucepan over medium heat.
  • Add sausage and onion and cook until onions soften, about 4 minutes.
  • Add garlic and cook 30 seconds longer.
  • Add chicken broth, tomatoes, milk (or heavy cream), noodles, salt and pepper.
  • Bring to a boil, cover and reduce heat to low.
  • Simmer for about 15 minutes, until noodles are tender.
  • Remove from heat and stir in cheese until melted.
  • Serve warm.
