Ingredients

  • 3 Tbsp. all-purpose flour
  • 3 Tbsp. cornstarch
  • 1 c. sugar
  • 3/4 tsp. salt
  • 3 c. milk
  • 3 egg yolks
  • 1 tsp. vanilla extract
  • 1 Tbsp. butter or margarine

Method

  • Combine flour, cornstarch, sugar and salt in a heavy saucepan. Gradually stir in milk. Cook over medium heat, stirring constantly, until thickened and bubbly. Beat egg yolks until thick and lemon colored. Gradually stir about 1/4 of hot mixture into yolks. Add to remaining hot mixture, stirring constantly, about 2 minutes or until thickened. Stir in vanilla and butter. Let cool. Yield: about 3 cups.
