Ingredients

  • 2 c. flour
  • 3/4 c. sugar
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. soda
  • 1 egg
  • 1 tsp. grated orange peel
  • 3/4 c. orange juice
  • 2 Tbsp. Crisco oil
  • 1 c. coarsely chopped cranberries
  • 1/2 c. chopped nuts

Method

  • Mix together flour, sugar, baking powder, salt and soda.
  • In separate bowl, combine egg, grated orange peel, orange juice and oil; add to dry ingredients, stirring just until moistened.
  • Fold in cranberries and nuts.
  • Bake in greased loaf pan at 350° for 60 minutes or until done.
  • Remove from pan.
  • Cool.
  • Wrap and store overnight.
