Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 1-1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 orange
  • 1/2 cup boiling water
  • 2 Tbsp shortening
  • 1 egg
  • 1 cup nuts
  • 1 cup raw cranberries cut in half

Method

  • Sift flour, sugar, baking powder, salt and soda into large bowl.
  • Grate orange and reserve 1 Tbsp rind.
  • Combine juice of orange and boiling water.
  • Stir in 2 Tbsp shortening and well-beaten egg.
  • Add to dry ingredients.
  • Mix until dry particles are moistened.
  • Stir in chopped nuts, cranberries and reserved orange rind.
  • Turn into greased 9 x 5 x 3-inch pan.
  • Bake at 350 for 55 minutes to 1 hour.
