Ingredients

  • 12 cup margarine
  • 1 cup white sugar
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 12 teaspoon salt
  • 1 cup plain yogurt or 1 cup sour cream
  • 1 teaspoon almond extract
  • 1 (398 ml) canwhole cranberry sauce, pureed
  • 12 cup walnuts, chopped
  • 34 cup icing sugar
  • 1 tablespoon hot water
  • 12 teaspoon almond extract

Method

  • Cream margarine, sugar and eggs.
  • Sift dry ingredients.
  • Mix alternately into creamed ingredients the dry ingredients and yogurt.
  • Add almond extract; beat well.
  • Spread 1/2 batter in well-greased tube pan.
  • Spread cranberry sauce on top.
  • Spread the rest of the batter, then the remaining cranberry sauce.
  • Sprinkle with walnuts.
  • Bake in 350F oven for 1 hour.
  • Cool in pan.
  • Run knife around edge: Remove from pan.
  • Pour glaze over cake.
