Ingredients

  • 1 1/2 cup oats, quick cooking
  • 3/4 cups flour, all-purpose
  • 3/4 cups whole wheat flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup walnuts chopped
  • 1/2 cup chocolate chips (semi-sweet)
  • 1 cup cranberries, dried
  • 1 each eggs slightly beaten
  • 2 teaspoons vanilla extract
  • 1/2 cup honey
  • 1/2 cup vegetable oil
  • 13 cup milk

Method

  • Preheat oven to 375F (190C).
  • Combine oats, flours, brown sugar, baking powder, baking soda and salt in medium bowl.
  • Stir in raisins and apples.
  • In a large bowl, combine egg, vanilla extract, honey, oil and milk.
  • Stir in walnuts, chocolate chips and dried cranberries.
  • Mix to form a smooth batter.
  • Drop batter by rounded teaspoon onto cookie sheets lined with parchment paper or coated with cooking spray, leaving 2 inches between each cookie.
  • Dip fingers in water and press dough down to about 1 1/2 inch diameter.
  • Bake for about 15 minutes, or until lightly golden.
  • Let cookies cool on the baking sheet for a few minutes.
  • Transfer cookies to wire rack to cool completely.
