Ingredients

  • 1 1/2 pound pork cut into 1 inch cubes
  • 3 each potatoes with skins, scrubbed, cubed
  • 4 each carrots cut in 1/2 inch pieces
  • 1 each onions chopped
  • 1 each zucchini cut in 1/2 inch pieces
  • 1 each tomatoes whole, canned, cut up
  • 2 cups water
  • 1 tablespoon beef stock beef, instant
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 3 tablespoons cornstarch
  • 2 tablespoons water

Method

  • Combine all ingredients, except cornstarch and 2 tablespoons water, in slow cooker.
  • Stir to blend.
  • Cover and cook on Low for 7 to 9 hours or at High for 4 to 5 hours.
  • Increase heat to high.
  • Combine cornstarch and water.
  • Stir slowly into stew mixture until thickened.
