Ingredients
- 1 (4 oz.) pkg. sliced corned beef
- 3 Tbsp. cooking oil
- 1 pkg. frozen diced potatoes
- salt and pepper to taste
- 4 poached eggs (optional)
Method
- Cut meat into slices and separate.
- Heat cooking oil in large skillet over medium heat.
- Carefully add potatoes; cover and cook, stirring now and then, until slightly brown.
- Then stir in meat; continue cooking until thoroughly heated.
- Salt and pepper to taste!
- Makes 4 servings.
