Ingredients
- 1/2 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 3/8 teaspoon salt
- 1 egg
- 1/2 cup milk
- 2 tablespoons canola oil
Method
- 1. Preheat oven to 425 degrees. Grease 6 muffin tins.
- 2. Stir together flour, cornmeal, sugar, baking powder and salt.
- 3. Add eggs, milk and oil. Mix together just until smooth-do NOT over mix.
- 4. Pour into 6 muffin tins. Bake for 15 minutes.
