Ingredients

  • 2 Tbsp. margarine
  • 1 medium onion, chopped
  • 2 Tbsp. green pepper, chopped
  • 1 lb. okra, sliced
  • 1 1/2 c. water
  • 3/4 c. canned tomatoes, chopped
  • 2 or 3 ears corn (slice kernels off cob)
  • 1 drop Tabasco sauce
  • salt and pepper to taste

Method

  • In a large skillet, melt margarine and saute onion and green pepper until tender.
  • Add okra, water and tomatoes.
  • Cook on medium heat, covered, for 15 minutes.
  • Add more water as needed as cooking progresses.
  • Stir in corn and Tabasco.
  • Continue to cook on simmer for 10 minutes.
  • Salt and pepper to taste, then cook, uncovered, for another 15 minutes.
  • Serves 6.
