Ingredients
- 2 Tbsp. margarine
- 1 medium onion, chopped
- 2 Tbsp. green pepper, chopped
- 1 lb. okra, sliced
- 1 1/2 c. water
- 3/4 c. canned tomatoes, chopped
- 2 or 3 ears corn (slice kernels off cob)
- 1 drop Tabasco sauce
- salt and pepper to taste
Method
- In a large skillet, melt margarine and saute onion and green pepper until tender.
- Add okra, water and tomatoes.
- Cook on medium heat, covered, for 15 minutes.
- Add more water as needed as cooking progresses.
- Stir in corn and Tabasco.
- Continue to cook on simmer for 10 minutes.
- Salt and pepper to taste, then cook, uncovered, for another 15 minutes.
- Serves 6.
