Ingredients
- 1 1/2 c. regular or low-fat cottage cheese
- 1/4 c. frozen mixed vegetables, thawed or fresh diced carrots, celery and green pepper
- 1 lettuce leaf
Method
- Mix vegetables into cottage cheese.
- Scoop with an ice cream scoop onto the lettuce leaf.
- Serve with a slice of Carrot-Raisin Bread.
