Ingredients

  • 3 sticks margarine
  • 3 c. sugar
  • 6 eggs (room temperature)
  • 3 c. cake flour
  • 1/4 tsp. salt
  • 1/4 tsp. soda
  • 8 oz. sour cream
  • 1 tsp. vanilla
  • 6 oz. pkg. frozen coconut, thawed

Method

  • Cream margarine and sugar.
  • Add eggs, one at a time, beating well after each addition.
  • Sift flour, salt and soda and add alternately with sour cream.
  • Add vanilla and beat well.
  • Fold in coconut.
  • Pour into greased and floured tube pan.
  • Bake at 300° for 1 to 1 1/2 hours or until done when tested.
  • Cool for 25 minutes in pan.
