Ingredients
- 3 sticks margarine
- 3 c. sugar
- 6 eggs (room temperature)
- 3 c. cake flour
- 1/4 tsp. salt
- 1/4 tsp. soda
- 8 oz. sour cream
- 1 tsp. vanilla
- 6 oz. pkg. frozen coconut, thawed
Method
- Cream margarine and sugar.
- Add eggs, one at a time, beating well after each addition.
- Sift flour, salt and soda and add alternately with sour cream.
- Add vanilla and beat well.
- Fold in coconut.
- Pour into greased and floured tube pan.
- Bake at 300° for 1 to 1 1/2 hours or until done when tested.
- Cool for 25 minutes in pan.
