Ingredients
- 1/2 c. sugar
- 3 Tbsp. cornstarch
- 1/4 tsp. salt
- 1 c. shredded coconut
- 3 egg yolks
- 1 c. evaporated milk
- 1 c. water
- 1 1/2 tsp. vanilla
- 1/2 c. coconut
Method
- Mix thoroughly in a saucepan the sugar, cornstarch, salt, shredded coconut and egg yolks.
- Stir in gradually until smooth a mixture of evaporated milk and water.
- Cook and stir over low heat until thickened, about 10 minutes.
- Remove from heat and stir in vanilla.
- Cover and cool thoroughly.
- Put in 9-inch baked pastry shell.
- Spread with meringue.
- Sprinkle with 1/2 cup coconut. Bake 7 to 8 minutes at 400°.
- Cool completely before cutting with wet knife.
