Ingredients

  • 1/2 c. sugar
  • 3 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1 c. shredded coconut
  • 3 egg yolks
  • 1 c. evaporated milk
  • 1 c. water
  • 1 1/2 tsp. vanilla
  • 1/2 c. coconut

Method

  • Mix thoroughly in a saucepan the sugar, cornstarch, salt, shredded coconut and egg yolks.
  • Stir in gradually until smooth a mixture of evaporated milk and water.
  • Cook and stir over low heat until thickened, about 10 minutes.
  • Remove from heat and stir in vanilla.
  • Cover and cool thoroughly.
  • Put in 9-inch baked pastry shell.
  • Spread with meringue.
  • Sprinkle with 1/2 cup coconut. Bake 7 to 8 minutes at 400°.
  • Cool completely before cutting with wet knife.
