Ingredients
- 1/4 c. all-purpose flour
- 3/4 c. sugar
- 2 Tbsp. cornstarch
- 1/4 tsp. salt
- 3 c. milk
- 3 egg yolks, beaten
- 2 Tbsp. butter
- 2 tsp. vanilla
- 1 c. coconut
Method
- Combine flour, sugar, cornstarch and salt in saucepan. Gradually add milk and blend well.
- Cook, stirring constantly, until thick.
- Blend 1/2 cup of hot mixture into egg yolks and add to hot mixture in saucepan.
- Cook one minute, stirring constantly. Blend in butter, vanilla and coconut.
- Cover and cool to lukewarm, stirring occasionally.
- Pour into baked pastry shell. Top with meringue.
