Ingredients

  • 1/4 c. all-purpose flour
  • 3/4 c. sugar
  • 2 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 3 c. milk
  • 3 egg yolks, beaten
  • 2 Tbsp. butter
  • 2 tsp. vanilla
  • 1 c. coconut

Method

  • Combine flour, sugar, cornstarch and salt in saucepan. Gradually add milk and blend well.
  • Cook, stirring constantly, until thick.
  • Blend 1/2 cup of hot mixture into egg yolks and add to hot mixture in saucepan.
  • Cook one minute, stirring constantly. Blend in butter, vanilla and coconut.
  • Cover and cool to lukewarm, stirring occasionally.
  • Pour into baked pastry shell. Top with meringue.
