Ingredients

  • 6 cans small button mushrooms or 1/2 lb. fresh mushrooms
  • 1/4 c. butter (the more the better)
  • 3 to 4 cloves garlic, split
  • pinch of thyme and oregano
  • lots of Parmesan cheese

Method

  • Melt butter; saute garlic slowly.
  • Let stand a while.
  • Remove garlic and add drained (or fresh) mushrooms, thyme, oregano and saute over low heat until lightly browned.
  • Turn off heat and let stand all day to season, stirring occasionally.
  • If time permits, reheat before transfering to chafing dish or candle warmer.
  • Add lots of grated Parmesan cheese; toss lightly to distribute cheese.
