Ingredients

  • 1 cup Butter, softened
  • 1 1/2 cup Sugar
  • 1 egg
  • 2 tbsp Molasses
  • 2 1/2 cup All-purpose Flour
  • 1 1/8 tsp Baking Soda
  • 1 1/2 tbsp Cinnamon
  • 1/4 tsp Salt

Method

  • Cream together the butter and sugar
  • Whisk together the egg and molasses.
  • Slowly incorporate into batter.
  • Sift together the flour, baking soda, cinnamon and salt.
  • Slowly mix into batter, working in batches.
  • In a small bowl, mix together a spoonful of sugar and a spoonful of cinnamon for sprinkling.
  • Dish onto parchment, silpat or greased pan.
  • I like a #40 disher (1.75 tbs).
  • Sprinkle each cookie with a pinch of the cinnamon sugar.
  • Do not flatten.
  • Bake at 350AF for 10 minutes.
