Ingredients

  • 1 3/4 c. flour
  • 1 1/2 tsp. baking powder
  • 3/4 c. butter
  • 1/2 c. sugar
  • 1/2 c. packed brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 c. shredded zucchini
  • 1 c. coconut
  • 3/4 c. walnuts

Method

  • Generously grease a 15 x 10 x 1-inch baking pan.
  • Set aside. In a small mixing bowl, stir together flour and baking powder.
  • In a large mixing bowl, beat butter with mixer on medium speed for 30 seconds.
  • Add sugars, beating until fluffy.
  • Add eggs and vanilla. Beat well.
  • Stir in flour mixture.
  • Stir in zucchini, coconut and nuts.
  • Spread evenly in pan.
  • Bake at 350° for 30 minutes.
