Ingredients
- 1 (11 oz.) can whole kernel corn, drained
- 3/4 c. low-fat Cheddar cheese, grated (3 oz.)
- 1/2 c. low-fat sour cream
- 1/2 c. yogurt (plain, nonfat)
- 1/4 c. mayonnaise (reduced calorie)
- 3 Tbsp. Parmesan cheese, grated
- 1 1/2 Tbsp. onion, grated
- 1 Tbsp. pimento, diced
Method
- Combine all ingredients in a bowl; mix well.
- Cover and chill thoroughly.
- Serve with baked tortilla chips or low calorie crackers or pita bread.
- Yields 3 cups, 18 calories per tablespoon.
