Ingredients

  • 2 chicken breasts
  • 1/2 cup water
  • 1/2 onion
  • 1 Bell pepper
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1 tbsp diced garlic or garlic powder
  • 2 can corn
  • 1 tsp chili powder
  • 8 slice sliced corn tortillas (cut as you prefer)
  • 1 can (or fresh) diced tomatoes
  • 1 Cheese of your preference

Method

  • Take the 2 chicken breasts in a skillet with very little (half a cup) of water, let it boil @ 350F for about 15 minutes.
  • Add diced onions as it boils
  • Remove and dice chicken after it is cooked.
  • In the skillet, combine the chicken, strips of bell pepper, let it simmer a few minutes then add the corn.
  • (Also if you haven't added already to your preference go ahead and add: the salt, the pepper and the garlic)
  • Now you can add in the tomatoes and the chili powder.
  • After its had a while to simmer and soak up the tomatoes, you can now add the corn tortilla strips.
  • After letting sit for a few minutes tortilla will begin to tear apart.
  • turn off heat, add cheese of your choice, i.e.
  • cheddar, monterrey jack or cream cheese as a topping.
