Ingredients
- 1 box Uncle Ben's long grain and wild rice
- 1 can cream of celery soup
- 1 medium onion, chopped
- 1 medium jar pimentos (undrained)
- 1 can French-style green beans, drained
- 1 can sliced water chestnuts, drained
- 1 c. mayonnaise
- 3 c. cooked diced chicken
Method
- Cook rice according to directions on box.
- (I use chicken broth instead of water.)
- Mix all ingredients except chicken.
- Mix well.
- Fold in diced chicken.
- Bake at 350° for 45 to 60 minutes or until it bubbles.
- This freezes well.
- Serves 10 to 12.
