Ingredients

  • 1 box Uncle Ben's long grain and wild rice
  • 1 can cream of celery soup
  • 1 medium onion, chopped
  • 1 medium jar pimentos (undrained)
  • 1 can French-style green beans, drained
  • 1 can sliced water chestnuts, drained
  • 1 c. mayonnaise
  • 3 c. cooked diced chicken

Method

  • Cook rice according to directions on box.
  • (I use chicken broth instead of water.)
  • Mix all ingredients except chicken.
  • Mix well.
  • Fold in diced chicken.
  • Bake at 350° for 45 to 60 minutes or until it bubbles.
  • This freezes well.
  • Serves 10 to 12.
