Ingredients
- 3 or 4 lb. chicken, cut in pieces
- cooking oil
- 2 small onions, chopped
- 1/2 bell pepper, chopped
- 2 buds garlic, minced
- 1 rib celery, chopped
- 1 can tomato sauce
- 1/2 lb. smoked pork sausage, cut into 2-inch lengths
- salt, red pepper and black pepper
- water to cover chicken
Method
- Fry pieces of chicken in oil until brown.
- Remove chicken from pot.
- Add onions, bell pepper, garlic and celery to oil and cook until transparent.
- Add other ingredients.
- Add water.
- Add seasonings (red pepper makes it piquante).
- Cook over medium heat until tender.
- Will take from 45 minutes to 1 hour.
- Serve with rice.
