Ingredients

  • 3 or 4 lb. chicken, cut in pieces
  • cooking oil
  • 2 small onions, chopped
  • 1/2 bell pepper, chopped
  • 2 buds garlic, minced
  • 1 rib celery, chopped
  • 1 can tomato sauce
  • 1/2 lb. smoked pork sausage, cut into 2-inch lengths
  • salt, red pepper and black pepper
  • water to cover chicken

Method

  • Fry pieces of chicken in oil until brown.
  • Remove chicken from pot.
  • Add onions, bell pepper, garlic and celery to oil and cook until transparent.
  • Add other ingredients.
  • Add water.
  • Add seasonings (red pepper makes it piquante).
  • Cook over medium heat until tender.
  • Will take from 45 minutes to 1 hour.
  • Serve with rice.
