Ingredients

  • 1 pound Ground Chicken
  • 1/4 cups Light Mayonnaise
  • 2 Tablespoons Olive Oil
  • 3 Tablespoons Unsalted Butter
  • 1 whole Carrot, Diced
  • 2 whole Celery Stalks, Diced
  • 1/2 whole Yellow Onion, Diced
  • 1/2 cups Peas, Frozen Or Fresh
  • 3 Tablespoons All-purpose Flour
  • 1- 1/4 cup Chicken Stock
  • 1 cup Mozzarella, Shredded
  • Salt And Pepper, to taste
  • 3 Brioche Buns

Method

  • In a bowl, combine ground chicken, mayo, salt and pepper.
  • Form into 2 or 3 large patties.
  • Preheat a skillet to medium-high heat and add olive oil.
  • Place chicken patties in skillet and cook for about 5 minutes on first side.
  • Flip and continue to cook another 23 minutes.
  • Remove patties from skillet and set aside.
  • In same skillet, melt butter.
  • Add carrot, celery, onion, peas, salt and pepper.
  • Saute until veggies have softened, about 7 minutes.
  • Next, sprinkle flour and cook for another minute.
  • Pour chicken stock into skillet and stir until thickened, about 45 minutes.
  • Once thick, remove skillet from heat.
  • To make burgers, preheat broiler.
  • Place bottom of brioche bun on a baking sheet.
  • Top bottom bun with chicken patty and spoon carrot-pea mixture on top.
  • Sprinkle some mozzarella on the gravy.
  • Repeat process with remaining burgers.
  • Place baking sheet under broiler for a few minutes or until cheese is nice and golden brown.
  • Add top brioche bun and serve immediately!
