Ingredients

  • 4 chicken fillets
  • 3 cloves garlic, crushed
  • 1 small chopped onion
  • 4 oz. sliced mushrooms
  • 1 c. hot chicken broth
  • 2 Tbsp. Parmesan cheese
  • flour
  • 1/4 c. dry Marsala wine

Method

  • Heat oil in frying pan.
  • Saute garlic until golden.
  • Add onions and heat until transparent.
  • Add sliced mushrooms; cook until slightly tender.
  • Lightly pepper each side of fillet. (Sprinkle meat with flour on both sides; this will thicken the broth.)
  • Saute both sides until meat is cooked.
  • Add chicken broth with Parmesan cheese and cook until liquid thickens.
  • When liquid broth is consistency of gravy, add Marsala wine and lower heat to slow simmer for 5 minutes.
  • Serve immediately.
