Ingredients
- 4 chicken fillets
- 3 cloves garlic, crushed
- 1 small chopped onion
- 4 oz. sliced mushrooms
- 1 c. hot chicken broth
- 2 Tbsp. Parmesan cheese
- flour
- 1/4 c. dry Marsala wine
Method
- Heat oil in frying pan.
- Saute garlic until golden.
- Add onions and heat until transparent.
- Add sliced mushrooms; cook until slightly tender.
- Lightly pepper each side of fillet. (Sprinkle meat with flour on both sides; this will thicken the broth.)
- Saute both sides until meat is cooked.
- Add chicken broth with Parmesan cheese and cook until liquid thickens.
- When liquid broth is consistency of gravy, add Marsala wine and lower heat to slow simmer for 5 minutes.
- Serve immediately.
