Ingredients

  • 4 Chicken Breasts
  • 2 Tbs Lime Juice (Marinade)
  • 2 Tbs Olive Oil
  • 1 Tbs Cilantro
  • 1 Tbs Garlic Powder
  • 1/2 Tbs Onion Powder
  • 1/2 Tbs Salt
  • 1/2 Tbs Crushed Red Pepper

Method

  • Cut chicken into small chunks and place in small mixing bowl.
  • Mix together lime juice, olive oil, cilantro, garlic powder, onion powder, salt, and crushed red pepper (tequila can be mixed in here too if using it) in a bowl and drizzle over chicken.
  • Mix chicken and marinade thoroughly and cover with tin foil and refrigerate until ready to cook (if cooking within an hour, leave it out)
  • Cut peppers into bite size strips.
  • For flavor splash lime juice and place some salt on strips and mix with hands.
  • Refridgerate untill ready to cook.
  • When chicken has marinaded heat some olive oil in a pan, when warm add chicken and cook until chicken is seared a bit.
  • After place chicken in tin foil, stacked, and set aside while cooking peppers.
  • In same pan, place peppers and mix with a metal spoon to get burnt pieces mixed in.
  • Cook until peppers are tendercrisp.
  • Serve in tortillas with cheese and any extra sauce or filling of your choice.
