Ingredients

  • 6 boneless chicken breasts, cut into bite size pieces
  • 3 eggs, beaten
  • 2 c. bread crumbs
  • 1 tsp. salt
  • 1 Tbsp. chopped parsley
  • 1/2 tsp. garlic powder
  • vegetable oil
  • 1 (8 oz.) pkg. fresh mushrooms
  • 6 slices Muenster cheese
  • 1 c. chicken broth

Method

  • Marinate chicken in eggs for 2 hours in the refrigerator. Combine bread crumbs, salt, parsley and garlic powder in plastic bag.
  • Shake chicken in bread crumbs and brown in oil.
  • Drain and place chicken in 13 x 9 x 2-inch baking dish.
  • Cover with a layer of mushrooms, layer of cheese and top with chicken broth.
  • Bake covered at 350° for 45 minutes.
