Ingredients

  • 1 chicken, cut in pieces
  • flour for dusting
  • 1/4 cup oil
  • 1 cup sliced onion
  • 1/2 cup green peppers
  • 1 clove garlic, minced
  • 1 can -15oz- tomato sauce
  • 1/3 cup water
  • 1 TBS parsley, minced
  • 1/2 tsp oregano, crushed(dried)
  • 1/4 tsp thyme
  • 3/4 tsp salt
  • pepper to taste
  • 1/4 pound mushrooms

Method

  • Heat oil. Dust chicken with flour and brown. remove from pan.
  • saute onion, pepper, and garlic until onion is tender
  • mix in tomato sauce, water and spices. Add chicken and cook over low heat 45 minutes. stir occasionally. Add mushrooms and cook additional 15 minutes.
