- 2 (2 lb.) fryers
- 1/2 c. olive oil or vegetable oil
- 2 medium onions, chopped
- 2 green peppers, chopped
- 1 red pepper, minced
- 1 garlic clove, minced
- 1 (16 oz.) can tomatoes
- 1 can tomato soup
- 2 Tbsp. dry white wine
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. allspice (optional)
Method
- Cut chickens in serving pieces and brown in hot oil.
- Remove chicken from pan.
- Add onions, peppers and garlic.
- Cook until slightly browned. Return chicken to pan. Add remaining ingredients and simmer 1/2 hour or until chicken is tender. Serve with noodles. Serves 6.
